Spanish

Para el cabrito

1 cabrito de leche

aderezo nortenio:

100 g culantro

40 g cebolla china

4 dientes de ajo

½ cebolla blanca

50 g pasta de aji amarillo

200 ml cerveza

100 ml chicha de jora

50 g zapallo loche

40 g pimiento rojo

sal al gusto

pimienta al gusto

comino al gusto

60 ml aceite neutral

Para los frejoles

500 g frejoles canario previamente remojados por 1 noche

1 cebolla roja picada

50 g manteca de cerdo o aceite

4 dientes de ajo

80 g tocino ahumado picado

100 g costilla ahumada

2 chorillos artesanales

1 hoja de laurel

50 g pasta de aji amarillo

agua hasta que cubra

For the kid goat

1 milk fed kid goat

Northern dressing:

100 g coriander

40 g spring onion

4 cloves of garlic

½ white onion

50 g yellow chili paste

200 ml beer

100 ml chicha de jora (Peruvian corn beer)

50 g loche squash

40 g red pepper

salt to taste

pepper to taste

cumin to taste

60 ml neutral oil

For the beans

500 g canary beans previously soaked overnight

1 chopped red onion

50 g pork lard or oil

4 cloves of garlic

80 g chopped smoked bacon

100 g smoked rib

2 artisanal chorizos

1 bay leaf

50 g yellow chili paste

water until covered

Step 1

Aderezo norteno: agregar todos los ingredientes a una licuadora, y a reservar.

Step 2

Para el cabrito: Trozar y agregar el aderezo norteno, mezclar bien y dejar marinar toda la noche, Agregar todo a al caja china. Agregar lena y carbon prendido y cocinar por 1 hora y media.

Step 3

Para los frejoles: En una olla agregar un chorro de aceite o manteca de cerdo junto con la cebolla y ajo picado, sazonar con sal y pimienta y cocinar por 10 minutos, agregar todos los ingredientes que faltan y cocinar tapado por 40 min aprox, luego opcional licuar 1/3 parte del frejol para que este mas cremoso.

Servir con arroz y salsa criolla

Step 1

Northern dressing: add all the ingredients to a blender, and set aside.

Step 2

For the kid goat: Cut into pieces and add the northern dressing, mix well and let marinate overnight. Add everything to the Chinese box. Add wood and lit charcoal and cook for 1 and a half hours.

Step 3

For the beans: In a pot add a splash of oil or pork lard along with the chopped onion and garlic, season with salt and pepper and cook for 10 minutes, add all the remaining ingredients and cook covered for approximately 40 minutes, then optionally blend 1/3 part of the beans to make it creamier.

Step 4

Serve with rice and Creole sauce.
