In my kitchen, nothing is wasted, not only do we save money but we push creativity. This time I had leftover burrito dough from my previous video so we are going to prepare a breakfast burrito. Look at the ingredients I use as a suggestion, don't be afraid to try and attempt new combinations. Here they usually put sausage or bacon but I am using what I had leftover in the fridge. Definitely, bacon fat gives it a lot of personality and a delicious flavor, but if you don't have it, use butter or olive oil, don't complicate things. For the Para el burrito

Cebolla

1 Tomate

30 g Jalapeno o aji amarillo

50 g Grasa de tocino, mantequilla o aceite

5 Huevos

50 g Queso mozzarella

75 g Arugula y espinaca

½ palta/aguacate

for the Masa de burrito

Polvo de hornear

Harina

Aceite de oliva

50 g Mozzarella cheese

75 g Arugula and spinach

½ Avocado

Step 1

For the Para el burrito

30 g Jalapeno o aji amarillo

1 Tomate

Step 1

Empezamos picando cebolla blanca, jalapeno o aji amarillo y tomate.

Step 2

En una sartén agregamos un poco de grasa del tocino, mantequilla o aceite y sudamos las verduras con sal y pimienta por 4 minutos.

50 g Grasa de tocino, mantequilla o aceite

Step 3

Batimos los huevos y agregamos las verduras junto al queso de preferencia.

50 g Queso mozzarella

5 Huevos

For the Para la masa

Polvo de hornear

Aceite de oliva

Step 1

Para la masa para burrito, debemos agregar 1. 5 tazas de harina, 3 g de polvo de hornear, sal, ½ taza de agua y 45 ml de aceite de oliva. Amasar por 5 minutos.

Step 2

Dividimos la masa en 5 trozos y dejamos reposar tapada con un trapo por 30 minutos antes de estirar.

Step 3

Estirar la masa hasta que esté casi translúcida y cocinar en una sartén a fuego lento por 2 minutos a cada lado.

Step 4

Agregar arugula o espinaca, palta, huevo y salsa a la tortilla y cerrar el burrito.

We start by chopping white onion, jalapeno or yellow chili, and tomato.

In a pan, we add a little bacon fat, butter or oil and sweat the vegetables with salt and pepper for 4 minutes.

50 g Bacon fat, butter or oil

Step 3

We beat the eggs and add the vegetables along with the cheese of preference.

- For the burrito dough, we must add 1.5 cups of flour, 3 g of baking powder, salt, ½ cup of water and 45 ml of olive oil. Knead for 5 minutes.

Step 5

We divide the dough into 5 pieces and let it rest covered with a cloth for 30 minutes before stretching.

Step 6

Stretch the dough until it is almost translucent and cook in a pan over low heat for 2 minutes on each side.

Step 7

Add arugula or spinach, avocado, egg and sauce to the tortilla and close the burrito.
